Traditional Ndolè in a KALIMA Pot

Product used : Cookware M1 Pot (Ø 29 cm, Comfort finish). Its capacity comfortably cooks for 6 without overflowing, and its reinforced handles make it easy to handle once full.

Ingredients (serves 6)

  • 500 g ndolè leaves (or fresh spinach as a substitute, for an adapted version)
  • 300 g raw peanuts, roasted and ground
  • 300 g beef or tripe, cut into pieces
  • 200 g smoked fish, flaked
  • 150 ml palm oil (red oil)
  • 2 onions, 4 garlic cloves, a piece of fresh ginger
  • Dried shrimp, stock cubes, salt, chilli to taste

Quantities are indicative and can be adjusted to taste ; this is not yet an official KALIMA house recipe.

Steps

  1. Brown the meat and smoked fish in the Cookware M1 pot over medium heat.
  2. Add the ground peanut paste and stir until smooth.
  3. Add the ndolè leaves, pre-blanched to remove bitterness, and simmer covered (Cookware M0/M1 lid) for about 1 hour.
  4. Adjust seasoning and serve hot — a KALIMA Enamel bowl works well for serving at the table.
