Traditional Ndolè in a KALIMA Pot

Product used : Cookware M1 Pot (Ø 29 cm, Comfort finish). Its capacity comfortably cooks for 6 without overflowing, and its reinforced handles make it easy to handle once full.
Ingredients (serves 6)
- 500 g ndolè leaves (or fresh spinach as a substitute, for an adapted version)
- 300 g raw peanuts, roasted and ground
- 300 g beef or tripe, cut into pieces
- 200 g smoked fish, flaked
- 150 ml palm oil (red oil)
- 2 onions, 4 garlic cloves, a piece of fresh ginger
- Dried shrimp, stock cubes, salt, chilli to taste
Quantities are indicative and can be adjusted to taste ; this is not yet an official KALIMA house recipe.
Steps
- Brown the meat and smoked fish in the Cookware M1 pot over medium heat.
- Add the ground peanut paste and stir until smooth.
- Add the ndolè leaves, pre-blanched to remove bitterness, and simmer covered (Cookware M0/M1 lid) for about 1 hour.
- Adjust seasoning and serve hot — a KALIMA Enamel bowl works well for serving at the table.
